I just made our sima so it will be ready for the weekend.
Sima (mead)
Sima is a sparkling lemon drink, loads of sugar guaranteed but oh, so delicious!
For 4 litres of mead you will need:
4 litres of water
2-3 lemons
4 desilitres brown sugar
3 desilitres of white sugar
pinch of dry yeast OR pea size ball of active yeast
4 bottles, sugar,raisins
Wash the lemons really good with warm water and a brush
(use prefably organic lemons)
Put the water to low heat on a stove.
Peel the yellow part of the lemons, try to avoid peeling the white part.
Cut all whites off (no needed in the mead) from the lemon, leaving just the flesh of the lemons.
Slice it and add the lemons and yellow sking to the water.
Mix in both sugars and heat up the water until it boils.
Once the sugar has melted and the mix is boiling, let it cool down until it's luke warm.
Add pinch of yeast, leave it to rest minimun 1 night/1 day.
Next day, put 1 tea spoon of sugar and few raisins to the bottles.
Carefully start to bottle the sima, using a siever and a funnel.
Be careful NOT to mix the dregs into.
Close the bottles well.
Sima will take 1 week to be ready in cool environment (fridge) or 3 days in room temperature.
We also will make some traditional doughnuts, it's been years since I made these last time.
Last Vappu I made tippaleipä - kinda tastes like churros but it's more slim and should look like a bird's nest.
